Great for Hanukkah or all year long an alternative to the traditional potato latkes you are used to eating.
Recipe:
3 carrots
3 zucchini
1 large onion
3 - 4 eggs
1/4 cup of wheat flour can substitute Masa Corn Flour for Gluten Free Version
1 tsp salt
1/4 teaspoon pepper
Oil
Grate the carrots, onions, and zucchini. Drain out the excess liquid. mix in the egg, flour, and seasoning. Form and place into a hot pan with oil. Fry until golden brown.
